Difference between HA 'Cluster' App and 'Mirror' App

Hello,
I am struggling to see the difference between a 'Cluster' defined application and a 'Mirror' application.
Both are mounted via the iSCSI initiator in the OS and presented as a new disk in the Storage Manager of the OS (as a single disk if MPIO is installed and selected during the iSCSI connection setup).
This disk is then available for discovery in Hyper-V which it can be used as Quorum or CSV purposes if I am correct?
Could someone please clarify the diffecences and usage scenarion for a clearer understanding... As it is the difference between the Standard and Ultimate edition.
Also... Is there any reason why the Software cannot be installed on the Hyper-V Cluster 'Host' Nodes without needing two SAN nodes seperately?
